The cheese with a unique texture (also known as the β€˜squeaky cheese’). Halloumi is a Cypriot semi-hard, unripened brined cheese made from a mixture of goats and sheeps milk and sometimes cows milk.

VEGETABLE AND HALLOUMI KEBAB

Preparation time: 20 mins

Serves: 4

Ingredients

1 medium eggplant, weighing about 1 lb.
3/4 tbsp olive oil
3/4 tbsp balsamic vinegar
3/4 tsp dry Italian seasoning Sant and pepper
4 oz halloumi cheese

Method

1 Deseed the peppers and chop into 2cm chunks. Cut the halloumi into 2 cm cubes. Put the halloumi, peppers and tomatoes into a large bowl.


2 Use a speed peeler to peel the courgettes into in long ribbons, then add to the bowl.


3 Pick and finely chop the mint leaves discard the stalks. Deseed and finely chop the chilli.


4 Add both to the bowl then finely grate in the zest of the lemon. Add the olive oil and season with alt and pepper. Mix well to coat


5 If using a griddle pan, put it on a high heat now to get screaming hot.

6 Skewer up the hallomi, cherry tomatoes and peppers alternatig with folded ribbons of courgette.

7 Cook on a griddle pan for 5 or 6 minutes on each side, until golden and cooked through

GRILLED EGGPLANT, HALLOUMI AND PESTO BURGER

Preparation time: 15 mins
Serves: Make 4 Burgers

Ingredients

1 medium eggplant, weighing about 1 lb.
3/4 tbsp olive oil
3/4 tbsp balsamic vinegar
3/4 tsp dry Italian seasoning
Salt and pepper
4 oz halloumi cheese

To assemble the grilled eggplant, halloumi and pesto burgers:

4 floured baps
4 tsp pesto
Mayonnaise, according to taste
2 leaves of lettuce, cut in half
1 large tomato, cut into 4 slices

Method

1 Cut the eggplant into 1/2 inch thick rounds, at its widest part. Save the remaining eggplant for another dish. Place the sliced eggplant in a shallow dish.

2 Whisk the olive oil, balsamic vinegar, italian seasoning, salt and pepper together. When adding salt, keep in mind that the halloumi is already salty cheese.

3 Pick and finely chop the mint leaves discard the stalks. Deseed and finely chop the chilli.

4 Add both to the bowl then finely grate in the zest of the lemon. Add the olive oil and season with alt and pepper. Mix well to coat

5 If using a griddle pan, put it on a high heat now to get screaming hot.

6 When the grill is hot, arrange the eggplant slices on the grill, and cookfor about 6 minutes on each side or till the eggplant is cooked.

7 Then grill the halloumi slices on both sides till golden grill marks appera, about 2 minutes per side.

8 If you don’t have a grill, you can cook the eggplant and halloumi batches on large skillet

9 You are now ready to assemble the burgers

10 Spread some mayonnaise, if using, on 2 halves of a burger bun. Take one half of a bun, and stack the grilled eggplant, halloumi and spread 1 teaspoon of pesto. Top it with tomato and lettuce, place the other half of the burger bun on top.

11 Serve with fries or a chilled cucumber salad tossed with a little olive oil, balsamic vinegar, salt and pepper.

Halloumi Fries

Preparation time: 20 mins
Serves: 6

Ingredients

2 x halloumi cheese
1/2 cup plan flour
1 tsp paprika
1 tsp goround cumin
Olive oil for frying

Method

1 Cut slice the Halloumi into chips like strips

2 Mix together flour, cumin and paprika

3 Toss the halloumi fres in the flour mixture, making sure the are coated completely

4 Fry the halloumi at 175C for 1.30 mins or until golden brown and the product is floating

5 Drain on kitchen paper before serving. Best served hot
